Çiğ Köftenin Hikayesi ; Hz. ibrahim, Nemrut’un putlarını kırarak, insanları Allah’ın varlığına inanmaya davet edince Nemrut öfkelenir ve Hz. İbrahim’in ateşe atılmasını emreder. Büyük bir ateş yakmak üzere yöredeki bütün odunlar toplanır. Tüm odunlar Nemrut’a lazım olduğu için Nemrut evlerde ateş yakmayı da yasaklar. Halk ateş yakmadan nasıl yemek yapacağını düşünür durur.

İşte bu günlerde bir Urfalı avcı, avladığı ceylanı eve getirerek hanımından yemek yapmasını ister. Hanım evde odun bulunmadığını söyler. Çevrede toplanacak bir tek dal dahi kalmamıştır.

Avcı, çoluk çocuğun aç kalmaması için hanımından bir çare bulmasını ister. Bunun üzerine kadın, ceylanın budundan yağsız et çıkararak bir tas üzerinde başka bir tasla döverek ezmeye baslar. Sonra ezilmiş eti bulgur, biber ve tuzla karıştırarak yoğurur, bahçesinden topladığı yeşil soğan ve maydanozla karıştırarak sofraya getirir. Böylece o leziz ve tadına doyulmaz ‘çiğköfte’ meydana gelir. Hz. İbrahim’in ateşe atıldığı yaklaşık dört bin sene önce ortaya çıkan çiğköfte, bir yemek çeşidi olarak o günden günümüze kadar gelir.

Türkiyenin bir çok ilindeki çiğ köfte ustalarının yaptığı çiğ köfteleri yeme fırsatım oldu ancak Diyarbakır`da rastladığım Ali Ustanın köftesi gibi lezzetli olanı yemedim. Bu tarifi bizzat kendim aldım ve yapılışını izledim sizlerle paylaşmak istiyorum.


  • 750gr çiğ köftelik kıyma
  • 1,5 kg esmer köftelik bulgur
  • 1 kilo domates salçası
  • 250ml nar ekşisi
  • 2 baş sarımsak
  • 2 domates
  • 250gr kara isot, 250 gr kırmızı pul biber
  • 1 demet maydonoz
  • 1 demet taze soğan
  • 4 baş kuru soğan
  • 1 su bardağı zeytinyağı
  • 3 limon
  • 1 yemek kaşığı kimyon, 1 yemek kaşığı karabiber

Çiğ köfte tepsimizin içine kıymayı, salçayı , ince ince kıydığımız sarımsakları, rendelediğimiz soğanları, kimyonu, karabiberi koyup 10 dakika yoğuralım. Daha sonra bulgurumuzu içine katalım ve birazda böyle yoğurduktan sonra, bisiklet tekeri gibi kestiğimiz limonları tepsinin içine katarak çiğ köftemizi limonla yoğuralım ki lezzeti gelsin. Köfte kıvama gelinceye kadar yoğurduktan sonra, ayrı bir kabın içine biberlerimizi koyalım üzerine nar ekşisini ve zeytinyağını boşaltarak iyice karıştıralım. Daha sonra bu hazırladığımız sosu da çiğ köftemizin üzerine döktükten sonra biraz daha yoğuralım. Son olarak ince ince kıydığımız yeşil soğanı ve maydonozlarıda kattıktan sonra (yalnız dikkat edelim yeşil soğanın sadece yaprak kısmını koyuyoruz) biraz daha yoğuralım ve çiğ köftemiz yemeye hazır.
